The way you mash or handle the ground beef can make a massive difference between the burger you enjoy to sink your teeth in and one that’s tough. After the quality of the beef, this is the most crucial factor you should pay your maximum attention to.
Because the more you mash to make a shaped patty, the more compressed and robust it becomes. (A burger press does that job nicely, if you don’t own one then you have to do it manually)
So instead of mashing hardly, try to handle the beef with light touches. Pick a big chunk of ground beef and with the palm of your hand press it against your work surface. You have got an unshaped patty, right?

For flipping the patty use a thin and wide spatula, they work best. The thinness allows the spatula to slide quickly under the patty without any hassle and the wide spatula allows you to flip the patty nicely without breaking it up.
On the stovetop, your burger will be ready in less than 10 minutes. Cooking it any longer will cause you to end up with a dry, tough burger no matter how strictly you have followed the given instruction. So don’t overcook.
